Chalet Baïta Chef Chloe’s White Onion Soup to try at home
Ingredients (serves 6):
– 1kg White Onions
– 3 Cloves of Garlic
– 4 Sprigs of Thyme
– 4 Sprigs Rosemary
– 300ml White Wine
– Double Cream

Method:

– Thinly slice the onions and sweat them on a very low heat to avoid any browning colour. They should go very soft.
– Add the garlic, thyme and wine.
– Continue to simmer until all the wine has evaporated.
– Next add enough cream to cover the ingredients and cook until the onions are very soft.
– Blend and adjust the seasoning to required taste (add a small amount of water or veg stock to adjust the consistancy as desired).

– To garnish – add crispy onions (shallow fry in oil), chopped fresh herbs and drizzle oil.

– Serve your tasty dish!
